Ingredients:

  • 1 1/2 lb. of Beef Caldillo or Ground Beef
  • 5-6 Med. Russet Potatoes, peeled & diced
  • 3/4 c. Roasted, peeled, & diced HATCH green chile
  • 1 garlic clove, chopped finely
  • 1 can of petite diced tomatoes (undefined)
  • 1 tsp. Beef Bouillon

Directions:

  1. In a large soup pot, brown meat with garlic and potatoes.
  2. Add green chiles, tomatoes, and beef bouillon.
  3. Add 2-4 cups of water and stir well.
  4. Cover and simmer for 1 1/2 – 2 hours or until meat and potatoes are tender.
  5. Serve with warm flour tortillas or tortilla strips.

If desired, add sour cream, shredded cheddar cheese, Pico de Gallo, or chopped cilantro on top of each serving for a little pizazz!
