  • 1 tablespoon fresh Key lime zest (from about 2 Key limes)
  • 1 to 2 tablespoons fresh Key lime juice
  • Additional fresh Key lime zest for garnish, if desired

    Heat oven to 350°F.  Line two baking sheets with parchment paper.

    In a large bowl, stir all Cookie ingredients with a spoon until a soft dough forms. Drop dough by rounded tablespoonfuls at least 2 inches apart onto baking sheets.

    Bake one pan at a time on the center rack for 10 minutes or until set and golden on the bottoms. Cool 2 minutes on pan. Remove from pan to cooling rack; cool completely, about 15 minutes.

    Meanwhile, in a small bowl, mix powdered sugar, 1 tablespoon Key lime zest, and 1 tablespoon Key lime juice. Mix until smooth. Add additional juice as needed.
