This bright, refreshing salad is the perfect side to pair with the Mediterranean Salmon Skewers we posted yesterday, and it comes together in only 10 min.

Yields: 4 servings

Total time: 10 min.

Ingredients:

  • 1 large cucumber, chopped
  • 1 pt. cherry tomatoes, preferably multi-colored, halved
  • 1 can chickpeas, drained and rinsed
  • 1/2 white onion, chopped
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup feta, crumbled
  • 2 Tbsp chopped fresh cilantro

Directions:

  1. In a large bowl, combine cucumber, tomato, chickpeas and onion.
  2. Make dressing: In a small bowl, whisk together oil and vinegar and season with salt and pepper. Add to large bowl and toss to combine.
  3. Top with feta and cilantro and serve.
