I have had several requests lately for the old SPS Micowave Candy recipes for Peanut Patties and Micro-Brittle so here they are. Remember many of today’s microwaves are faster (higher wattage) so watch your time closely and always go for the least amount of time and then add time if necessary.  Connie Moyers
Peanut Patties
2 cups sugar
1/2 cup water
1/8 teaspoon salt
1/2 cup light corn syrup
1 1/2 cups raw peanuts
2 tablespoons butter
1 teaspoon vanilla
2 to 3 drops red food coloring
Combine sugar, water, salt and light corn syrup in a 2 quart glass measure. Bring to a boil approximately 3 minutes on high; stir and add peanuts/ cook approximately 7 to 9 minutes on high or until a soft ball stage (234 degrees) is reached. add butter, vanilla and red food coloring. cook and beat until creamy.
Micro-Brittle
1 cup raw peanuts
1 cup sugar
1/2 cup white corn syrup
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon vanilla
Stir together nuts, sugar, syrup and salt in a 1 1 /2 quart casserole or 4 cup glass measure. Place in microwave oven and cook 7 to 8 minutes, stirring well after 4. add butter and blend well. return to oven and cook approximately 2 to 3 minutes more on high or until nuts are golden brown. Add baking soda and vanilla and gently stir until light and foamy. Pour onto greased cookie sheet and let cool. When cool, break into pieces and store in airtight container. Note: If using nuts other than raw peanuts, stir nuts in after first 4 minutes of cooking.
Remember the best peanuts are Valencia Raw Shelled for both of these recipes!
