This Surprise-Inside Lucky Charms™ Cake is a total party in every slice. Made with Betty Crocker™ Party Rainbow Chip Cake Mix and Rich & Creamy Vanilla Frosting, it’s a fun two-layer cake with a hidden sprinkle and marshmallow center, finished with a swirled frosting top and an extra confetti border of Lucky Charms marshmallows and rainbow sprinkles. It’s bright, nostalgic, and exactly the kind of cake that makes people’s eyes light up when you cut into it.
Ingredients
- 1 box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
- 1 cup whole milk, left at room temperature for 20 to 30 minutes
- 1/4 cup vegetable oil
- 3 eggs, left at room temperature for 20 to 30 minutes
- 1 1/2 cups marshmallows from 1 box Lucky Charms™ Cereal (see Tips)
- 1/3 cup assorted rainbow sprinkles
- 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting

Heat the oven to 350°F. Thoroughly grease the bottoms and sides of two 8- or 9-inch round cake pans with cooking spray or butter.

In a large mixing bowl, whisk the cake mix, milk, eggs, and oil until the batter is smooth and well blended, scraping down the sides of the bowl as needed.

Divide the batter evenly between the cake pans. Bake for 26 to 27 minutes for an 8-inch pans, 22 to 27 minutes for 9-inch pans, or until a toothpick inserted in the center comes out clean.

Cool in the pans for 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.

Using a 3- to 4-inch round cookie cutter (or a 3- to 4-inch diameter bowl as a guide), gently cut a circle out of the center of each cake layer, careful not to cut through the outer edge. Remove the center pieces and set aside.

Carefully place one cake ring on a serving platter. Spread a layer of frosting over the top of the cake ring. Place the second cake ring on top of the first.

Fill the center of the cake about half full of the marshmallows and sprinkles. Place one of the reserved center pieces of cake on top of the sprinkles mixture to fill the hole in the cake. (Use the remaining center piece of cake for another use.)

Spread a layer frosting over the top and sides of the entire cake using an offset spatula or butter knife to create a smooth finish. Add extra frosting to the top center of the cake and use the back of a spoon or spatula to create a circular pattern over the top of the cake. Sprinkle marshmallows and sprinkles around the top outer edge of the cake. Slice and serve!
